Recipe : Pasta with chorizo and tomato
Spaghetti or linguine for 2
1 tsp oil and 1 tsp butter
1 onion, peeled and finely diced
1 clove garlic, peeled and finely diced
1/2 tin plum tomatoes
salt and pepper
1/2 Chorizo sausage, cut into thin slices
1/2 tsp pimenton (smoked paprika)
1 tsp capers
1/4 cup finely grated Parmesan cheese
Heat the oil and butter in a pan over medium heat and saute the onion, garlic and chorizo until the vegetables are softened and the chorizo is crispy.
Add the tomatoes and pimenton, reduce the heat and let everything simmer and thicken for about 15 minutes.
Add the capers, season with salt and pepper and serve with some boiled and drained spaghetti, adding a little of the water and 1 tsp butter to create a rich, silky sauce. Sprinkle lots of Parmesan over everything.
The sweet, crispy and smoky chunks of chorizo in this dish work nicely with the soft tomato sauce. The pimenton, (smoked paprika) highlights the spice in the sausage itself and the capers add some zing and tang.
