Recipe : Parsnip chips
4 parsnips, peeled and cut into fries, length ways
1.5 cups of vegetable oil
salt
Heat the oil in a heavy pan over medium heat until around 350oF or until a cube of bread browns in 30 seconds. Put the chips straight into the oil and fry for about 7 minutes until they are golden brown and crisp. Remove from the oil and drain on kitchen towels. Sprinkle with salt before eating.
