Ham meal no 3 - Ham burritos with pink kale and fajita seasonings



Recipe
1 tbsp oil
1/2 onion, peeled and sliced
1/2 bell pepper, seeded and sliced
1 clove garlic, peeled and finely sliced
a handful of mixed greens, shredded
1/4 cup leftover ham, finely sliced

Seasoning
1 tsp chili powder
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp onion salt
1/2 tsp steak seasoning
1/4 tsp sugar
 juice of half a lime

1 tbsp sour cream
2 tortillas
1/4 cup grated cheddar or crumbly cheese such as feta


Heat the oil in a pan over medium  - high heat and add the onion, garlic, pepper and greens. Stir fry together until the vegetables are softening and the greens wilting.
Add the ham and all seasoning ingredients. Stir well to mix and add a little more lime juice if necessary.
Place a little less than half of the filling across the middle of a tortilla and roll up with the join at the bottom. Repeat with the other tortilla. 
Place both tortillas in a baking tray, top with the remaining vegetable mixture, spread over the sour cream and sprinkle everything with the cheese.
Grill (broil) until the tortillas are crisping at the edges and the cheese is golden brown and bubbling.
