Recipe : Pork with bell peppers
2 pork chops
salt and pepper

1 tsp oil and 1 tsp butter
1 onion, cut into chunks
1 red and orange bell pepper, seeded and cut into thick chunks
1/2 tin plum tomatoes
salt and pepper
8 leaves of basil
A little chili powder
1/4 cup grated cheese

Season the pork chops well and place under a pre heated grill.
Meanwhile, make the sauce.
Heat the oil and butter in a pan over medium heat and saute the onion and peppers, stirring, until softened.
Add the tomatoes, season with salt and pepper and about 1/4 tsp chili powder and reduce the heat to low - medium. Cover the pan and let the vegetables sweat for about 15 minutes.
Remove the pork from the grill once well cooked and crispy on the edges. Top with the sauce mixture, a few basil leaves and sprinkle over the cheese.
