Eggs au gratin


This is a meatless meal for when you're too tired to go shopping. Assuming you have eggs and fresh produce available, that is. 






Recipe : Eggs au Gratin
1 red onion, chopped finely
1 small orange and yellow pepper, cored, seeded and chopped finely
2 scallions, chopped finely
4 asparagus stalks, chopped finely
1 tsp oil and 1 tsp butter
2 eggs
Salt and pepper
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese

Heat the oil and butter in a frying pan over medium heat and add the onion, peppers and scallions. 
Gently fry until they are starting to soften. Add the asparagus and season with the salt and pepper. Stir well and allow to cook for a few more minutes.
Place the vegetables into a baking dish and crack the eggs on top, one at each side.
Cover with the breadcrumbs and Parmesan and bake in a pre heated 375oF oven until the top is golden brown and the eggs cooked to your liking.
