Tomato Soup

 
Recipe : Tomato Soup
1/2 onion, chopped
1 clove garlic, chopped
1 orange pepper, chopped
1 green chili pepper, chopped
6 sprigs of thyme
1/2 tin plum tomatoes
1 cup chicken stock
1 tsp salt and freshly ground black pepper
1 tsp chili powder
  • Heat 1 tbsp olive oil and 1 tsp butter together until hot in a large saucepan and fry the onion, garlic, pepper and chili together over medium heat until soft.
  • Add everything else, bring to a boil, reduce heat and simmer for about 30 minutes.
  • Blend well until fairly smooth and serve.
